Oak is used in winemaking to vary the color, flavor, tannin profile and texture of wine. It can be introduced in the form of a barrel during the fermentation or aging periods,  or staves added to wine fermented in a vessel like stainless steel.

A stave is one of the curved pieces of wood that comprise a barrel. It might seem pretty straightforward, but staves have a lot of variables, all of which will impact the barrel's effect on wine: the type of wood, how toasted the stave is, how wide it is, and so on. "U-stave" and "v-stave" barrels both have additional grooves on the inside, giving more surface area for the wine's exposure to the barrel's influences.
